Armenian Coffee, Cardamom and Chocolate Cookies (Gluten-Free)
These cookies are delightful and elegant. The mix of cardamom into sweet dishes is very common in the Mediterranean culture and gives a nice exotic touch. Cardamom should be probably be sprinkled a little on everything anyway with its highly notable health benefits in aiding digestion, detoxification and fighting inflammation. I love the addition of Armenian coffee, which has an impeccable, deep coffee flavor that blends incredibly well with the cardamom and accentuates the cacao. These cookies are also gluten-free which is nice since a good go to recipe for yummy gluten free cookies is always great to have whether you avoid gluten or not. I myself try to limit gluten as more and more studies show gluten to be harmful to stomach and brain health.
Ingredients (30 cookies)
1 teaspoon Armenian/Turkish coffee
1 stick unsalted grass-fed butter, at room temperature
1 cup hazelnut flour
1/2 cup potato starch
1/2 tapioca starch
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
A pinch of sea salt
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1/2 cup bittersweet chocolate bits
2 tablespoons unsweetened cocoa powder
1 teaspoon orange zest
Directions:
1) Preheat oven to 350F
2) Combine and mix dry ingredients of coffee, cinnamon, cacao powder, cardamom, salt, starch and flour. Keep aside.
3) Using an electric mixer beat the butter and sugar for 3 minutes. Add the eggs and vanilla.
4) Cover two baking sheet with parchment, form balls, press slightly and lay them in the pan.
5) Bake for 15 minutes
