Classic Cacik- Yogurt, Mint & Cucumber Salad

Whenever I see fresh mint and cucumbers in my summer garden in Long Island, I immediately get inspired to make classic cacik, a popular Turkish summertime dish. Cacik is a yogurt and cucumber concoction with mint leaves, garlic, yogurt, cucumbers, olive oil and salt. Its such a perfect food for summer…refreshing yogurt, cool mint and water-rich cucumbers. Its also a very simple snack especially if you are looking to lose some weight this summer. You can safely eat it as a replacement for lunch with its protein, fiber and energy content. Cacik is also great with chicken! Enjoy classic cacik and enjoy your summer :)

1 cup organic low-whole fat yogurt (you need some fat for the Vitamin D to absorb since it is a fat soluble vitamin although the olive oil provides some as well)
1 medium cucumber cut into cubes with skin
1 garlic, minced
2 tablespoon fresh mint leaves, cut thinly
1 tablespoon olive oil
Salt

1) Cut the cucumber into cubes by cutting the cucumber vertically into 4 strips.
2) In a bowl, add the yogurt, cucumbers, garlic (minced), mint leaves and salt
3) Garnish with more mint (not just for décor but for eating too, full of antioxidants) and enjoy!
